Con esa ilusión decidimos apostar por un food truck, pensando que sería el comienzo perfecto para llevar nuestra cocina a más personas. Sin embargo, el camino no fue fácil. Nos vendieron el camión asegurando que estaba en buen estado, pero cuando por fin lo recibimos y comenzamos a revisar la cocina, descubrimos que la realidad era muy distinta. Había que reformarlo prácticamente todo. Lo que parecía el inicio de un sueño se convirtió en un gran reto. Buscamos apoyo en talleres japoneses, pero muchas puertas se cerraron. En varios lugares no quisieron ayudarme por ser extranjera, y por momentos sentí que levantar este proyecto sería mucho más difícil de lo que imaginé.

With that hope we decided to invest in a food truck, thinking it would be the perfect start to bring our cooking to more people. However, the road was not easy. We were sold the truck claiming it was in good condition, but when we finally received it and began checking the kitchen, we discovered the reality was very different. We had to renovate nearly everything. What seemed like the start of a dream became a big challenge. We sought help from local workshops, but many doors closed. In several places they refused to help because I was a foreigner, and at times I felt that getting this project off the ground would be much harder than I imagined.

その思いを胸に、私たちはフードトラックに投資することを決めました。より多くの人々に私たちの料理をもたらす完璧なスタートだと思っていました。しかし、道のりは簡単ではありませんでした。トラックが良好な状態にあると保証されて購入しましたが、実際に受け取ってキッチンの検査を始めたとき、現実は全く異なることに気づきました。 ほぼすべてを改装する必要がありました。夢の始まりに見えたものは大きな課題に変わりました。日本の工場にサポートを求めましたが、多くのドアが閉ざされました。外国人だという理由で助けてくれない場所もありました。

Después de tantos obstáculos, esfuerzo y personas que hicieron posible este camino, finalmente nació La Mexicana. Más que un food truck, este espacio representa perseverancia, identidad, gratitud y amor por nuestras raíces. Cada platillo que sale de aquí cuenta una historia: la de una mujer mexicana que llegó a Okinawa con su cocina, la de una comunidad que creyó en su sazón, y la de dos ángeles japoneses que ayudaron a convertir un camión averiado en un sueño andando. Así fue como La Mexicana abrió sus puertas, lista para compartir el sabor de México con el corazón bien puesto en Okinawa.

After so many obstacles, effort and people who made this path possible, finally La Mexicana was born. More than a food truck, this space represents perseverance, identity, gratitude and love for our roots. Each dish that comes out of here tells a story: that of a Mexican woman who arrived in Okinawa with her cooking, of a community that believed in her flavor, and of two Japanese angels who helped turn a broken truck into a moving dream. That is how La Mexicana opened its doors, ready to share the taste of Mexico with a heart firmly placed in Okinawa.

これまでの多くの障害、努力、そしてこの道を可能にした人々の後、ついにラ・メヒカーナが生まれました。フードトラックというだけでなく、このスペースは忍耐力、アイデンティティ、感謝、そして私たちのルーツへの愛を表しています。 ここから出てくる各料理は、物語を語ります。オキナワに自分の料理を持ってきたメキシコ人女性の話、その味を信じたコミュニティの話、そして壊れたトラックを動く夢に変えるのを手伝った2人の日本人天使の話です。こうしてラ・メヒカーナはドアを開き、メキシコの味をオキナワの心を込めて共有する準備ができました。
